RECIPES:

BURRITO BOWLS – You can do steak, beef or chicken. Cook your meat in a mix of paprika, cayenne, cumin, chili powder, salt, pepper, garlic and onion powder. Set your meat aside. In a pot cook chopped onion in oil and cook until soft, add in garlic, and then rice and water and then let it cook down until rice is tender and then add in fresh chopped cilantro. In a skillet, put corn, pimentos, chopped scallions, cumin, salt and pepper and cook for 5 minutes and move to a bowl. In same skillet warm up a can of black beans, add to your bowl, add your meat, your rice and in same bowl add pico de gallo, sliced jalapenos, shredded lettuce, sour cream, shredded cheese and more fresh cilantro.

BREAKFAST WRAP – I like ham, but you could do sausage or bacon too. In a skillet, put oil and put a bag of frozen diced potatoes with peppers and onions until cooked and then add in your chopped ham (or whatever meat you want). In a bowl, mix milk, sour cream, eggs, salt and pepper and chopped bell peppers and scallions, and shredded cheddar cheese and then combine all in a greased casserole dish, cover with foil and bake at 350 for 30 minutes, remove foil, and bake for another 30 minutes or until cooked through. Warm tortillas and scoop your egg dish on each tortilla, add your favorite salsa and sliced avocado and wrap it up!
