RECIPES:

ARGULA AND PROSCIUTTO FLATBREAD – I had a flatbread at 110 Grill that was super tasty so I decided to try a version at home! I used Naan bread and heated both sides on a skillet, before topping. Spread some fig jam on one side, add some chopped slices of prosciutto, crumbled bleu cheese, and caramelized onions and then broilfor a few minutes until crispy and warm and then take out of the oven and top with arugula and then crack some fresh pepper on top.

CHORIZO RIGATONI – Cook rigatoni according to package, al dente and set aside. I used two type of chorizo, the ground chorizo and the links that I cut into small bites, and cook them both in a skillet and set aside. In same skillet, cook chopped onions in oil, and once soft, add minced garlic for a minute of cooking and then add in a small can of tomato paste, combine and then add in some paprika and black pepper, add in some sherry vinegar (couple tablespoons), add in some heavy cream and some butter and combine and cook until butter is melted, continue to cook down adding water and more sherry vinegar if not saucy enough, then add in your pasta and chorizo and combine. Serve with fresh chopped parsley and fresh grated parmesan cheese.
