RECIPES:

CHICKEN POT PIE SOUP – It’s starting to be soup season . . .and with the cooler temps I love making a soup every Sunday. This one is very easy to make!In a pot, melt butter and add chopped carrots, celery and onions and fresh thyme, season with turmeric, salt, pepper and cook until getting soft. Add flour on the vegetables and combine and then add in some white wine and chicken broth. Add in shredded chicken breast and shredded rotisserie chicken breast and chopped parsley and then add in some creamy and mix while it’s thickening. Add in more salt and pepper to taste. With this soup, you can serve with crust dippers. Roll out a pie crust on a sheet pan with parchment paper and then top with grated cheddar cheese and fresh chopped parsley and cook until crust is golden, and cheese is bubbling, about 15 minutes at 375 degrees. Set aside when cool, and then cut into strips and serve with your soup.

Football Season:

ENCHILADAS – I did shredded chicken enchiladas and shrimp enchiladas for football Sunday and they were delicious! I made chicken breast seasoned with salt, pepper, onion and garlic powder, paprika, chili powder and then shredded. I also cooked shrimp and seasoned the same way. I used little flour tortilla wraps to serve more, but you can also make large enchiladas. You can make homemade refried beans or open a can of your favorite and then mix with a can of green chiles and Mexican diced tomatoes, drained. I put a layer of the refried beans on the flour tortilla, then spread on some Mexicali Dip (buy from Aldi) and then your protein, shredded Mexican cheese and roll up and put on sprayed casserole dish. Continue until wall wraps are rolled and then pour on enchilada sauce to cover all the wraps, top with more Mexican shredded cheese and bake for 25-30 minutes or until bubbly. Serve with tortilla chips!
