My Fish Tacos!

Jeremy wanted my recipe  . . .as some of you know and have seen from my other posts that I don't measure when cooking so I do everything by taste and sight :)

Hopefully they taste good to you!


FRIED FISH OR GRILLED FISH

Cod (I have no idea how much)

Flour

Old bay seasoning

Salt/Pepper

Egg

Bottle of beer (I have used Bud and I have used Guiness - whatever you want but IPA's are too bitter for me)

Garlic powder

Oil


Fried fish recipe: Combine your dried ingredients and then mix in an egg and then mix in beer until the consistency is smooth (not the entire beer or it will be too watery).  Pat your fish dry and dip in batter and cook in oil until golden brown.


Grilled or Pan cooked fish without batter: Season fish with Old bay seasoning, cayenne pepper, salt, pepper, garlic powder and fresh lime juice and cook in a pan or on aluminum foil on the grill until cooked through.


CABBAGE SLAW

I buy a package of red slaw and classic slaw in the produce section and mix it up.

(You can make your own if you want - red cabbage, cabbage, carrots sliced thin)

Red Onion chopped/shredded like cabbage

Lime

Fresh Cilantro

Cayenne Pepper

Sour Cream

Honey

salt/pepper

Diced Avocados 

Diced tomatoes

Combine your cabbage bags and red onions, chop up some cilantro and mix in some lime juice, cayenne pepper, sour cream and honey.... you don't need too much of that stuff it just makes it a little creamier.  Add some salt and pepper and taste test.  Once its mixed you can add the tomatoes and avocados on top. 


OTHER ITEMS YOU CAN ADD TO MIX IT UP:

I sometimes will mix corn, black beans, red peppers with some cayenne, chili powder, lime juice and jalepenos to the top. 

Always throw on some shredded mexican cheese!


SHELLS:

Obviously you can use hard, soft, corn, flour shells - what ever you are in the mood for!

I like crunch of the hard shells but hate how messy so I take a floured soft shell, spread on a thin layer of fat free refried beans and then break the hard corn shell down the middle and place on the beans to make it stick together.  

Add your fish, cheese and slaw, and any extras you want!
