RECIPES:
STUFFED BUTTERNUT SQUASH – Half your squash and seed it and then rub with olive oil and season with salt and pepper and put face down on parchment paper on cookie sheet and score the back of the peel and then bake for 45 minutes or until soft at 400 degrees. While that is baking, in a frying pan, cook Jimmy Dean hot sausage, and then put in bowl and set aside. In same pan, add more oil, cook chopped onion, minced garlic, chopped Bella mushrooms and sage, until soft and then season with salt and pepper and then add in kale and cooked brown rice, add sausage, gruyere cheese and parsley. Remove squash from oven, scrape the cooked squash and add to sausage mixture put all back in skin of squash top with gruyere and parmesan cheeses and bake until melted and bubbly.
CHICKEN AND CORN WHITE CHILI – In a pan, cook chopped onion, minced garlic and chopped poblano peppers until soft and season with cumin, paprika, chili powder, salt and pepper, coat with flour and then add chicken broth and boil until thick, then add in a block of soft cream cheese, add cooked chopped chicken breast or chopped rotisserie chicken meat, thawed corn kernels, a can of white beans (rinsed and drained). Cook together on low for 20 minutes and add more seasoning to taste . . .chili powder, salt, pepper and cayenne if you want more spice. Serve with jalapenos, scallions, and tortilla chips.
