RECIPES:

CIDER CHICKEN – In a bowl, combine cubed, peeled sweet potatoes, sliced apples, chopped rosemary, season with salt and pepper and drizzle with olive oil and set aside. In a skillet add olive oil, and sear chicken thighs (if you want bone-in cook with skin down until golden if boneless sear chicken on both sides but don’t have to cook all the way through) and then remove chicken and in same skillet add apple cider, honey and grainy mustard. Heat until it reduces a bit and then add butter, melt and then add back in your chicken, and surround with your apples and sweet potatoes. Put skillet in oven for 20-30 minutes at 400 until potatoes are soft. Drizzle the sauce over the chicken when you serve.

RITZ CRACKER CASSEROLE – Cook chicken breasts, seasoned with salt and pepper and shred.  In a blender, mix cottage cheese, sour cream, chopped chives, garlic powder, cayenne pepper until smooth. Add shredded chicken and frozen thawed peas to your sauce and season with pepper. Put your mixture in a greased casserole dish and top with shredded cheese. In another bowl, combine crushed ritz crackers with melted butter, put on top of the cheese and then bake at 400 for 25 minutes and top with fresh chopped parsley.
