WINTER COOKING:

CHICKEN PROTEIN WRAPS – Dylan found this recipe and made it during the snowstorm and was so good! Packed with protein! In a blender or food processor, mix cottage cheese, plain Greek yogurt, mayonnaise, honey, fresh squeezed lemon juice and garlic paste and mix until smooth. For you chicken, cut into bite size pieces and season with a mix of fresh chopped parsley, paprika, cayenne pepper, salt, pepper, garlic and onion powder. Cook your chicken until brown and cooked through. IN a large bowl, mix shredded mozzarella and cheddar cheese, with chicken and add in your sauce and combine. Lay out a tortilla (you can use regular flour, or high protein, or Joesph’s low carb depending on what kind of diet you are on). Lay out your chicken mixture on the wrap and roll up like a burrito and spray with olive oil and sprinkle on fresh parsley and bake for 10 minutes, flipping halfway through and serve.

DRAGON NOODLES – Got the recipe from Delish and did a few things to change it up a little, but hot and spicy is perfect on a cold day! In a skillet, heat some sesame oil, and add in sliced boneless, skinless chicken breast and season with garlic powder, cayenne pepper, salt and pepper and cook until golden and then remove and sets aside. In the same pan put in minced garlic and chopped scallions and then add in chopped red bell pepper, carrots, zucchini, summer squash and cook until soft. In a bowl, mix soy sauce, lime juice, chili paste, peanut butter and chicken broth. In the same pan as veggies, at in your chicken and then pour your sauce on top and then add in cooked lo Mein noodles sprinkle crushed red pepper on top and then add on fresh chopped cilantro.
