FOOTBALL COOKING:
HOMEMADE RAMEN BOWLS – Always great on a chilly day! For my broth I start with a chicken broth, add sliced jalapenos, lemon grass, ginger and minced garlic and let that simmer on low for an hour while I waited for the chicken to marinate and all the sides to be done. I marinated bite size pieces of chicken in soy sauce, orange juice and 5 spice Chinese seasoning for about an hour. Cooked that up on a skillet and set aside. For shrimp, I cooked peeled, deveined shrimp in a mix of soy sauce, chili paste and garlic powder. Cook and set aside. I quickly steamed (separately) sliced red bell pepper, carrot sticks, Bok choy and shitake mushrooms. I put each in a bowl. I also did minced scallions, thinly sliced jalapenos and sprouts. I set up everything in a bowl so people could pick what they wanted in their bowl. When you are ready to eat, quickly make the ramen noodles in water and remove from liquid . . .if you leave the noodles they will become mushy. So I made the noodles as people wanted to eat. Noodles and then top with all their sides and then ladle in the ramen broth. Serve with chow mein noodles on top.
KOREAN BBQ MEATBALLS – Everyone in the family loved these. I used ground beef and ground pork, combined with soy sauce, minced garlic, grated ginger, chili paste, red pepper flakes, brown sugar, sesame oil, minced scallions, combine and then add in egg and plain panko crumbs, form into meatballs and fry in a mix of sesame and vegetable oil until brown on each side and cooked through. Serve with a sauce: mix mayo, sriracha, honey, soy sauce, rice vinegar, lime juice.
