FOOTBALL COOKING:

FRIED MASHED POTATO BALLS – Make your mashed potatoes ahead of time or if you have leftover potatoes this is the perfect recipe! In one bowl whisk eggs, one bowl put Italian style panko crumbs. For your potatoes you can add chopped bacon and shredded cheddar cheese. Take an ice cream scoop or a spoon and create potato balls, dip in egg wash, roll in panko crumbs and then cook in a deep fryer or pan fry in oil until browned and crunchy. You can serve with sour cream, but I served with a sriracha dip (mayo, sriracha and hot honey).

FRENCH ONION SOUP BITES – I like to use yellow onions, Vidalia and red onions and thinly slice and cook down in butter with salt and pepper for almost an hour or until caramelized and then add in some beef broth and sherry and continue to cook until liquid absorbs and then add a little sprinkle of sugar and pepper. Grease a mini muffin pan. Roll out crescent sheets and cut into squares and line the muffin pan with your dough, then add in a spoonful of your onions and top with grated gruyere cheese and bake for 20 minutes or until dough cooked through and golden. Top with fresh thyme.
