COMFORT FOOD:
SWEEDISH MEATBALL SOUP – To make your meatballs use a combination of pork and beef, add in oregano, lingonberry jam, parsley, all spice, nutmeg, salt and pepper. In a bowl, mix eggs, milk and panko crumbs and then add to your meatball mixture and combine and then roll into small meatballs, bake at 350 until cooked through and set aside. In a large pot, put oil, chopped carrots, celery and onions, season with salt and pepper and once cooked and soft, add in flour to coat and then add in beef broth. Then I used my immersion blender to grind all the veggies up, add in heavy cream, and Worcestershire sauce. In a bowl, combine Dijon mustard and room temperature sour cream and combine and then add to your broth and mix.Add fresh chopped parsley, and salt and pepper to taste. Then add egg noodles and meatballs and once pasta is cooked serve with warm slices of Italian bread.
FOOTBALL COOKING:
FRIED CHICKEN AND WAFFLE BITES – Buy mini waffles from the freezer section unless you have a mini waffle maker and then you can make your own. For your fried chicken: mix buttermilk, Dijon mustard, salt and pepper and cayenne pepper. Pour mix in a freezer bag and add cut pieces of chicken breast in the bag and keep in fridge for a day or at least 8 hours. In a bowl mix flour, cornstarch, baking powder, garlic and onion powder. Take your chicken out of buttermilk and coat in flour mix and then fry in oil in a frying pan on each side until chicken is cooked. Heat your waffles, put a piece of chicken on top, drizzle some maple syrup, sprinkle with cayenne pepper, and melted cheddar cheese on top.
