RECIPES:

APPETIZER SHRIMP BITES – I made these for a party last week and they were so good! In a large Ziplock bag, put olive oil, crushed red pepper, garlic powder, cayenne pepper and a ranch dressing packet and put in saltines and coast the saltines until covered (I did this in small batches) then bake at 250 for 10-15 minutes and then flip and cook until golden. While the saltines are cooking, cook some large shrimp deveined and shelled and then put in a bowl and squeeze fresh lemon juice on them, chopped parsley and chopped dill, chopped chives. When your saltines are done, put a layer of whipped cream cheese on it, top with some hot pepper jelly (I like stonewall kitchens) and then top with a shrimp, and top with chopped chives. 

Camping Season:

OPEN FACED DUMPLINGS – I found this on a Blackstone recipe site and recently my kids discovered their love of dumplings, so this is perfect for camping. In a bowl mix ground pork or chicken and add in minced garlic, minced ginger, red chili, minced cabbage, soy sauce, an egg, ponzu sauce and sesame oil and combine. Put a scoop of your mixture on your Blackstone Griddle and top with a round wonton wrapper and push down on top of your mixture and cook for a few minutes and then flip with the wonton on the griddle. Cook until your meat is done. In a bowl mix red chili, chopped scallions and ponzu sauce. Pull your dumplings off the griddle, top with shredded carrots, more shredded cabbage, and your ponzu sauce mixture, sprinkle sesame seeds on top!
