RECIPES:

SHRIMP FLAT BREADS – Very easy and oh so good! On naan bread smear a layer of Boursin garlic herb cheese, top with cooked shrimp, chopped sundried tomatoes in oil, and some chopped pieces of bacon if you like. Then top with some shredded mozarella cheese and bake at 350 for 8-10 minutes or until cheese is warm and melty. Take out and top with fresh chopped basil and serve.

SCALLOPS AND SHRIMP SCAMPI – This is all I wanted for Mother’s Day! I heated butter in my skillet and seared my scallops on each side and removed and set aside, added shrimp to skillet (more butter if needed), cook and set aside. In the same skillet, add a little olive oil, minced garlic and cook for 30 seconds and then add in some white wine, crushed red pepper flakes and salt and pepper to taste and cook down. Then add in fresh squeezed lemon juice, chopped fresh parsley, and put your shrimp and scallops back in the sauce. I made fresh linguine and then poured the sauce and seafood over noodles to coat. Serve with fresh grated parmesan cheese.
