RECIPES:

ASIAN LETTUCE WRAPS – I made three versions of these, and my favorite was the meatballs! For your meatballs, in a bowl mix chopped fresh cilantro, fresh grated ginger, minced scallions, panko breadcrumbs, salt, pepper, chopped napa cabbage, egg white. Then, in a food processor chop fresh raw, shelled, and deveined shrimp. Add shrimp and ground pork and then combine all together and form into balls. In a skillet, put chili oil with vegetable oil and cook on all sides until cooked through and set aside.  Shred daikon radish and carrots and put in a bowl with fresh cilantro. Boil rice vinegar and water and then pour over sugar until dissolved and then pour on veggies and put in fridge. For your meatball sauce, in a bowl combine, fish sauce, soy sauce, minced garlic, fresh ginger, rice wine vinegar, hoisin sauce, Thai chili sauce and red pepper flakes and then pour on your meatballs. In a Boston lettuce leaf put a couple meatballs, and top with your pickled vegetables, chopped napa cabbage and chow Mein noodles for some crunch. (Other options: shrimp cooked in sesame oil and coated with sauce or ground turkey with the sauce.)

ITALIAN CHICKEN – In a bowl mix cornstarch, grated parmesan cheese, onion and garlic powder, salt, pepper, Italian seasoning. Trim chicken breast and pound out thin, and then coat in cornstarch mixture and fry in a skillet in butter until golden on each side. (You will be baking so it doesn’t have to be cooked through. Once golden on each side, top with fresh spinach, slice of prosciutto, chopped roasted red peppers, and marinated fresh mozzarella cheese and bake until chicken is cooked through, and cheese is bubbly. I served with a mix of zucchini, summer squash and eggplant, seasoned and cooked in butter.Sprinkle with more parm cheese.
