RECIPES:
CORNED BEEF IRISH NACHOS – I tried these at the Spirit of Ireland event last week. I made a couple of corned beefs and used it to make hash and these nachos. Bake waffle fries according to the package. Top with chopped and shredded corned beef, shredded Mexican cheese, sliced jalapenos, and bake until melted and then drizzle with thousand island dressing and chopped scallions.
POTATO SOUP – Cook bacon, chop, set aside. Chop celery, carrots and onions and heat in butter in a soup pot until soft.Add in chopped, peeled russet potatoes, water, Better than Boullion Roasted Chicken and bring to a boil until all your veggies are soft and then use your immersion blender to puree. In another saucepan, melt butter, add flour and then slowly mix in some half and half until you make a thick sauce. Add that to your soup pot and season with salt, pepper, paprika and Spud Fixin’ Seasoning (Tom’s Camp Mix). Serve with chopped bacon, chopped scallions, shredded cheddar cheese.
