SUNDAY COOKING:

STEAK STUFFED PEPPERS– In a skillet, cook chopped onions and peppers in oil until soft, add in some minced garlic until fragrant and add in shaved steak and cook all together. In another pot, make brown or white rice according to the package. You can also make it healthier with riced cauliflower. Once your steak is cooked, add in tomato past, salt, pepper, Italian seasoning, a can of Italian style diced tomatoes and mix, then add in with your rice once cooked.Stuff your mix into peppers that you have chopped the top off of and seeded. Put peppers in a casserole dish, with a little water at the bottom, bake for 35 minutes at 350, remove and add cheese on top and bake again for 20 more minutes or until golden brown and the pepper is soft.

POTATO CASSEROLE – I love potatoes, love green bean casserole, because of those crunchy onions so let’s try something new. Mandolin Yukon gold potatoes, or slice thin, layer the potatoes in a greased casserole dish. For your sauce, in a bowl mix cream of mushroom soup, onion soup and milk. Pour this sauce on top of your potatoes and cover dish tight with aluminum foil and cook at 350 for an hour and then remove your foil and top with French fried onions and shredded cheddar cheese, put back in oven until golden and melted cheese.
