SUNDAY COOKING: No Patriots, but we still love to eat!
STUFFED MEATBALL BALLS – I love these and made them for New Year’s. In askillet, cook minced onions in oil, until soft, add in minced garlic and then tomato paste and add to a large bowl with ground beef, Italian seasoning, chopped fresh parsley, grated parmesan cheese. In another bowl, mix Italian seasoned bread crumbs with some milk and add that to bowl and an egg and then combine everything together. Make them into small patties and wrap around a mozzarella pearl and seal up and put on a baking sheet lined with parchment paper. Bake your meatballs for 15-20 minutes at 400.Once cooked, remove and then take pizza dough and roll out thin and cut pieces off and wrap and seal around your meatballs. Once all of your meatballs are covered in dough, put on a cookie sheet, brush with oil and cook again until golden brown. Serve with marinara dipping sauce.
ANTIPASTO SQUARES – Another recipe I made for New Year’s Eve. On an greased baking sheet, lay down a sheet of crescent rolls (sometimes you can find sheets, if not seal up the crescent rolls to make a sheet. Then put a layer of hot ham slices, regular ham slices, a layer of provolone cheese slices, salami, pepperoni, mozzarella cheese slices, and then pepperoncini peppers, then top with another crescent sheet or roll sheet that has been sealed. Oil the top of it, sprinkle Italian seasonings on top and grated parmesan/romano cheese and bake for 30-35 minutes at 350 or until golden. Slice into squares.
