SUNDAY COOKING: I have done these recipes before, but oh so good!

SHRIMP AND CORN CHOWDER – I love this chowder! If you don’t like shrimp, you can do this recipe and substitute in chopped potatoes, just know that it will take longer for it to cook the potatoes. In a pot, cook chopped celery, carrots and onions in butter and then add in chopped red peppers and garlic. Add in a little can of green chiles, some chopped adobe chilies (depending on how spicy you like it) and then coat everything with flour. Add in chicken broth and heavy cream. Add in cream style corn, and frozen corn, crushed red pepper, Italian seasoning, salt, and pepper to taste. If you need to thicken mix cornstarch and chicken broth and add to your soup. If you like bacon, cook bacon while the soup is simmering. The shrimp doesn’t take too long to cook so I add to the soup closer to when I want to eat it.  Once the shrimp is pink, you are ready to eat! Crumble the bacon on top to serve.

SHORT RIB POUTINE – Coat a mixture of flour and salt and pepper and brown in a skillet in oil on each side and then put in a crock pot. For your sauce: beef broth, mix ketchup, sriracha, chopped onions, minced garlic, Worcestershire sauce and brown sugar and then pour over your short ribs. Cook on low for 8 hours and then shredded your meat and remove bones and fat. If you want to thicken your gravy mix some beef broth and corn starch in a bowl and then add to your gravy. I cook steak fries according to package, but you could use whatever you want for your fries. Pour your short rib gravy over the fries, add cheese curds on top and broil until bubbly. (Aldi has a variety of cheese curds. I like to add Cajun, garlic and regular on top.)
