SUNDAY COOKING:

SPANAKOPITA – I made this as an app for Thanksgiving and it was a hit. In a bowl I mixed chopped scallions, minced garlic, feta cheese, fresh chopped spinach, dry dill, parsley, and eggs and black pepper. In a greased casserole dish, layer 2 sheets of phyllo sheets and then brush with oil, 2 more layers of phyllo and more oil and continue until you are about half way through your sheets, then top with your spinach mixture and then add two sheets, oil, two sheets, oil, until all the sheets are gone and then last sheet, more oil and then bake at 325 for an hour or until golden.

FRENCH ONION SOUP - I used a combination of yellow onions, white onions, red onions and one Vidalia onion and add in fresh thyme and cooked in butter for almost an hour to get them perfectly caramelized, sprinkling with sugar to glaze them. When all done, add in some Dijon mustard and Worcestershire and mix and then coat with flour. In a pot, use beef broth as your base, add in some white wine and sherry and then add in your onion mixture.Cook on low with a bay leaf for about 20-30 minutes until thickened. Remove bay leaf, add in pepper to taste. In the oven, toast sliced French bread, or a bread bowl that has been carved and toast the tops also for the croutons. Add the soup in a ramakin or bread bowl, add your croutons, and then top with grated gruyere cheese and broil until cheese is golden and bubbly and garnish with more fresh thyme.
