FOOTBALL SUNDAY COOKING:

COCONUT CURRY RAMEN – This week I wasn’t sure if I was able to cook as Dylan had a football game at noon, but I fit in this ramen for the Pats game. I started with coconut oil in a pan and cooked carrots (that I cut into strips), and largely chopped red peppers, chopped onion, and freshly sliced jalapenos and seasoned with salt, pepper, five spice Chinese seasoning, curry powder and cayenne pepper and then when soft, but not mushy, add in minced garlic and then add to a large soup pot. Add in coconut milk that has been shaken a lot so it’s not lumpy, and then chicken broth and season with more curry, onion powder, salt and pepper, cayenne pepper, freshly squeezed lime juice and tons of cilantro. I made chicken seasoned with the Chinese spices and curry powder, cooked in coconut oil and then shredded and I made shrimp that I cooked in coconut oil and the same spices. I let people choose if they wanted shrimp, chicken or both. So just make your own ramen bowls. Anyways, when you are ready to serve, add in your ramen noodles (no seasoning packs) and then serve with sriracha on the side, lime wedges and more fresh cilantro.
