IDEAS FOR COOKING –

CHICKEN MADEIRA – This is a Cheesecake Factory Copycat Recipe and boy do I just love it! Pound out chicken breast and season with salt and pepper. In a skillet, add butter until melted then cook your chicken on both sides until golden and then set aside. In same skillet, add more butter and sliced portobella mushrooms until they are soft then remove. Add in madeira wine to the skillet and scrape the bottom., add beef broth and stir as it reduces. Add water/cornstarch mix to and then add in the cooked mushrooms, put the sauce over the chicken and add on sliced mozzarella cheese and broil until the cheese is golden and bubbly. Serve with steamed asparagus and mashed potatoes and garnish with chopped parsley.                                           

ANTIPASTO CHICKEN – Cut slits in each chicken breast, but don’t cut all the way through and then drizzle with olive oil, salt, pepper and Italian seasoning.Stuff a piece of salami, provolone, ham pepperoncini, olives in each slit and then sprinkle with parmesan cheese. Do this with each breast and then cook for about 30 minutes at 400 degrees. Serve with couscous or a riced cauliflower.
