IDEAS FOR COOKING –
PASTA PRIMAVERA – It’s starting to get warm, so I love adding so many fresh veggies into my dinners. Chop asparagus and cook in boiling water until just tender and then set aside. In a skillet add olive oil, chopped shallots and salt and pepper. Cook until soft and then some white wine and simmer. While that is cooking, cook up your fresh pappardelle pasta and set aside, in same boiling water quickly blanche sugar snap peas and set those aside. In your skillet add crème fraiche and mix all together, then add shaved carrots, lemon zest and then add in your blanched asparagus and peas, salt, pepper, tarragon a little bit of your pasta water and pasta and fold together.
STEAK FRIED RICE – Cook your white (or brown) rice according to the package and set aside. For your sauce mix oyster sauce, soy sauce, pepper and sesame oil together. Cut sirloin steak into cubes and put half your sauce on it as your marinade and let sit aside for 30 minutes. In a wok or skillet, put some oil and cook minced garlic and diced onions and then add in carrot sticks, pea pods, spouts, mini corns until all golden brown then add your extra marinade and your chopped steak. Once cooked through, add your rice and combine everything. Then add an egg or two and cook and then serve with chopped scallions.
