IDEAS FOR COOKING –

CHEESY CHICKEN FLORENTINE – Pound out chicken breast and season with salt and pepper and cook in a skillet in butter. Once cooked, remove from pan and set aside. In the same pan, add in garlic, and then cherub tomatoes and cook until they blister and then add in fresh spinach and start to wilt, then some chicken broth, softened cream cheese, heavy cream and then some red pesto and cook until combined. Add salt, pepper and onion and garlic powder to taste. Add your chicken back to the saucepan and top with fresh grated parm cheese. I serve on top of riced cauliflower, but you could do pasta if you prefer.
