IDEAS FOR COOKING –

CRAB STUFFED MUSHROMS – I just love stuffed mushrooms and this is a great low carb version. I bought bella mushrooms and scooped out the stems and some of the caps, chopped up. In a pan, I cooked minced shallots, minced garlic and the chopped up stems, added chopped parsley, tarragon, couple splashes of Worcestershire sauce, a can of white crab meat, cream cheese, grated parmesan cheese, mozzarella cheese and when everything is soft and combined stuff in mushroom caps and bake for 20 minutes at 350.

SEAFOOD STEW – I love this so much! In a large pot heat sliced fennel, chopped Vidalia onion and chopped shallots in oil until all soft. Add in minced garlic and red pepper flakes and then add 4 jars of clam juice and then a bottle of spicy hot V8 juice and white wine then cook down, to season I added hot old bay seasoning, pepper, oregano and salt to taste, if you like spice like me add more red pepper flakes. Then I added clams, deveined and shelled shrimp, scallops, cod and I would have added mussels but forgot to buy them! I cooked on super low to get the taste of the seafood in the broth. Garnish with parsley. I served with toasted baguette pieces.
