IDEAS FOR COOKING –

FRIED TORTELLINI – These were super easy and great bite size snack for a party! I did two flavors, but you could do it with any tortellini flavor. I did chicken and I did cheese. Just par boil fresh tortellini and rinse to cool. In a bowl mix, Italian seasoning, breadcrumbs, grated Romano and parmesan cheese. Put your tortellini in flour, egg wash and then your bread crumb mixture and fry very quickly in the fryer until golden. I served with homemade sauce.

HOMEMADE SAUCE – I start with chopped celery, carrots and onions and cook in olive oil until soft, then add in tons of minced garlic and cook until fragrant, add chopped parsley, chopped fresh basil. Add in water and plum tomatoes and cook until the skin can be pealed off, then I add in 2 big cans of crushed tomatoes, tomato paste and some roasted red peppers and then season with onion and garlic powder, red pepper, salt and pepper and then I use my immersion blender to smooth out.

SPIEDINI – I don’t even know how to pronounce this but it’s basically and Italian meat kabob. So good! Chop pieces of Italian sausage into big chunks (maybe 4-5 for each link) then, I took top round steak and cut against the grain in strips and then rub with oil and then coat them in a bread crumb and parmesan cheese mixture and then roll and put on a wooden kabob stick and then a piece of sausage, then a piece of chopped red pepper, then chopped red onion, another piece of steak, sausage, then a sage leaf and then topped with a piece of plum tomato. I grilled on my Blackstone Grill, but you could cook inside on a skillet too.
