IDEAS FOR COOKING WEEK –

STUFFED CABBAGE SOUP

I am a big fan of stuffed cabbage so add some broth and enjoy it in soup form. IN a large pot cook up your ground beef (or ground turkey for a healthier option) and season with salt and pepper. Drain and set aside. In your pot, add in some butter and chopped Vidalia onions and cook until soft and then set aside with your ground meat. Add in more butter to the pot and then some chopped cabbage and cook until soft and then add in your ground meat, onion, a can of crushed tomatoes, some beef broth, fresh chopped plum tomatoes, Italian season and more salt and pepper to taste. While that simmers, cook up some white or brown rice according to the package. Once that is done, add to your broth and serve up some toasted bread.

ASPARAGUS STUFFED CHICKEN

Slice your chicken breast in the middle but don’t go all the way through and then pound it out thin. Season your chicken with salt and pepper inside and out and then stuff with a couple slices of mozzarella cheese and some asparagus (trimmed) and the roll the chicken and secure with a toothpick. On the outside season with a combination of brown sugar, chili powder, paprika, Italian seasoning, garlic powder and rub all over the outside. IN a skillet add some oil and sear the chicken on each side for a couple of minutes and then cover the skillet with foil and bake at 375 for 15-20 minutes or until cooked through.
