IDEAS FOR COOKING WEEK –

SHRIMP AND AVOCADO LETTUCE CUPS

You know me and my love for shrimp! Start by heating up some oil and add in grated ginger and minced red onion and cook until soft. Add in some brown sugar, red wine vinegar, and a minced red chilli pepper and cook for a couple minutes or until it is all combined and sugar melted and then add in a can of chopped tomatoes, salt and pepper. Let it simmer on the stove for 30 minutes or so and then add some honey and set aside to cool. In a large bowl, mix lime juice, fish sauce, brown sugar. Peal and cube an avocado and add to the sauce, and then add in chopped cooked, peeled, deveined shrimp and chopped coriander. Fill butter lettuce leaves with your shrimp mixture, add sour cream and top with your tomato jam.

 

PINEAPPLE CHICKEN OVER WHITE RICE

Chop some chunks of chicken breast or thighs and cook in oil until golden brown in a skillet. Then add in some chopped red bell pepper and cook until softened. In a small pot make your sauce, soy sauce, brown sugar, pineapple juice, hoisin sauce, minced garlic and minced jalapeno and cook for about 5 minutes. To thicken our sauce mix cornstarch and water to make a paste and then whisk into your sauce pan and cook until thick. Pour your sauce into the skillet over your chicken and then add in chopped pineapple chunks, cashews, salt, pepper and minced scallions.
