IDEAS FOR COOKING THIS WEEK –

KOREAN BBQ CHICKEN FRIED RICE -

I love my wok and I love making homemade fried rice and lo Mein. In a bowl mix soy sauce, brown sugar, minced garlic, chili paste, grated ginger, rice wine vinegar, sesame oil. Cook your rice according to package and let cool (I like brown rice, but you can use your favorite). For an easy and fast dinner, you can shred a rotisserie chicken and season with salt and pepper. Or you can just cook and shred your homemade chicken breast just make sure you season well.In your wok put in some peanut or sesame oil and then add in an egg or two and fry it up and scrambling as you cook and set aside. In your wok add your shredded chicken, and half of the bowl mix of your Korean sauce. Stir and cook until caramelized and then set aside.Add in some more oil and some minced chopped red long chili pepper, chopped scallions, shredded cabbage, pea pods, grated ginger, and minced garlic. Stir fry until cabbage gets soft (2-3 minutes) and then add in your cooked rice and the rest of your sauce. Cook to coat and then add in your chicken and egg and then chopped cilantro on top.

STUFFED SWEET POTATOES

I just love sweet potatoes, or regular potatoes! So good especially when you stuff them! I often do baked potato bars. Anyways, wash and dry your potatoes and then poke holes all over and coat with oil, salt and pepper and bake for an hour at 450 on a baking sheet that has a wire rack on it so they cook evenly. While they are cooking make your “stuffing.” I cook up some turkey burger and drain, add in some chickpeas (drained), chopped cilantro, some crumbled feta cheese, some Mitchell’s Fresh Salsa, and if you are like me and love a good sauce I add in Smoked Maple Sriracha Sauce (made local The Spicy Shark - https://shop.thespicyshark.com/collections/frontpage/products/smoked-maple-sriracha) Mix all together and once your potatoes are done and cooled off a bit, cut a slit, stuff with your stuffing into your sweet potato and bake for 10-15 minutes at 325!Serve with a dallop of sour cream!

CHICKEN AND RICOTTA MANICOTTI

Cook your chicken breasts seasoned with salt and pepper and shred your meat and set aside. In a pan, add some oil and cook up some chopped Vidalia onion and add minced garlic until soft and fragrant and set aside. in a bowl add ricotta cheese, egg yolks, chopped fresh basil and then your cooked onions and garlic and season with salt and pepper and mix well. In a food processor add your chicken and pulse until fine and then put in your ricotta mix. Cook your manicotti noodles in a pot of salted water until they are soft but al dente. In a casserole dish put a layer of red sauce, and then put your ricotta mix in a pastry bag (or use a zip lock bag and cut a corner off to fill your tubes and lay over sauce. In a saucepan put some of your red sauce, fresh spinach and heavy cream, fresh grated parmesan cheese and mix until spinach is cooked and then put on top of your manicotti and bake for 30 minutes at 400. Add some fresh shredded parm cheese on top and bake/broil for 5 more minutes until bubbly and golden. Serve with garlic bread.
