IDEAS FOR COOKING THIS WEEK –
CHICKEN PARM MEATBALLS
In a bowl mix ground chicken, Italian seasoning, grated fresh parm cheese, chopped basil, garlic powder, crushed red pepper, salt, pepper and egg. Cut mozzarella cheese sticks into small pieces, when you are forming your meatballs, form them around the piece of cheese. Roll your meatballs in an Italian flavor panko crumbs and then bake at 350 degrees for 25 minutes or cooked through. Serve with your favorite marinara sauce for dipping!
CHEESY CORN FRITTERS
In a bowl mix drained corn, shredded sharp cheddar cheese, crumbled feta cheese, chopped cilantro, minced jalapenos, chopped scallions, salt and pepper and then add in some flour, baking powder and cayenne pepper to combine everything. In a bowl mix eggs and milk and then add to your corn and flour mix. Take a muffin tin and spray with pam and then put your corn mixture into each and then bake for 20 minutes at 350. Serve with sour cream, salsa or a sweet chili sauce.
