IDEAS FOR COOKING THIS WEEK – Patriots on a Saturday night and we are out of quarantine so it's a win all around! Appetizers for all!
Bunless Burger Bites - It's a new year and a lot of people want to enjoy a low carb diet so I am making these easy little burger bites. For your mini patties: mix ground sirloin or hamburg in a bowl with minced garlic, salt, pepper, onion powder and I always like to add in a drop of fish sauce and worcestershire and roll them into meat balls and then flatten like a burger and put in a skillet with olive oil and cook on each side for only 2 minutes or until done but don't over cook because they are so small. Cook up your bacon and then cut into squares. Assemble your burgers meat, bacon, square of cheese (I like cheddar but you can use whatever) and put in the oven on broil to quickly melt your cheese on top of burger, then add a squirt of mustard, ketchup a dill pickle round, and top with a half of a cherry tomato. Hold it together with a longer toothpick!
Sausage Roll - For your filling chop green peppers, red onions and onions into small pieces and cook in a pan until soft put in a bowl with your ground sausage (I use both hot and mild) and then add in some panko crumbs, garlic powder and an egg and lightly combine without over mixing. Roll out your puff pastry and cut in half the long way and put your sausage mixture down the center of it and then close up your puff pastry around your sausage and seal with egg wash. Cut the roll into about 6 pieces and then brush with the rest of the egg wash and bake for 25-30 minutes on 400. (Put them on parchment paper when cooking to make sure they don't stick.)
Nacho Balls - In a bowl mix ground turkey, black beans, canned corn, your favorite salsa, chili powder, cayenne pepper, paprika, cumin, salt, pepper, onion and garlic powder, panko crumbs, egg and form into balls. Roll the balls into flour, then put in a mix of egg and milk and then in a food processor grind nacho cheese doritos into a crumb and then roll your ball in the doritos, spray with pam and then air fry at 400 degrees for 10 minutes.Serve with some cheesy dip! (Melt velveeta and mix with some salsa).
