IDEAS FOR COOKING THIS WEEK – Back to Cooking on Sundays!

FRIED SHEPHERDS PIE BALLS – I cooked ground beef with minced onions, garlic paste, fresh thyme, rosemary, salt and pepper. Once browned, sprinkle with flour, Worcestershire, red wine and cook down and then add in a can or regular corn and a can of cream corn and mix then set aside.I made my mashed potatoes (white potatoes cooked until soft, cream cheese, butter, cream, salt, pepper, Spud Fixin’ seasoning) and set aside until cool to work with.Once everything was cool I laid out syran wrap, put down some mashed potatoes and made a little center pocket with a spoon, added in beef mixture, a little more mashed potatoes and then use the syran wrap to roll it into a ball, twist the top and repeat . . .I made 40 balls for this week!Once they are all formed put them in the freezer (at least 2 hours) or until you are ready to make.When ready to fry, take off syran wrap, put in egg wash and then bread crumbs and fry immediately until golden brown.Served with a brown gravy: I used demi glaze, umi seasoning, beef broth, water, a packet of brown gravy.

PUMPKIN SPREAD CROSTINI APPS – When I saw pumpkin butter in the Aldi flyer I thought about what I could use that for!I love apple butter so I figured we would give this pumpkin butter a try.Melt some butter and add sliced onions, with some sugar, salt and pepper and cook until soft and golden on a lower heat – I cooked mine around 30 minutes to make so caramelized and good.Cut French bread in to slices that are about an inch thickand put on a baking sheet, and drizzle with olive oil and bake at 350 for 10 minutes or until lightly toasted, remove from oven and spread on a layer of cream cheese, top with your pumpkin butter and then top with your caramelized onions, and then fresh chopped sage.

CREAMY SAUSAGE TORTELLINI SOUP – I cooked sweet and hot Italian sausage (no casing), with chopped onions, garlic and chopped carrots crumbled and then add some flour to make a roux, add in Italian seasoning, tomato paste, a can of crushed tomatoes, chicken stock, heavy cream. Once you have a thick base with a flavor you love (I continue to add, salt, pepper, crushed red pepper to get a flavor I like) you can add in fresh chopped spinach and cheese tortellini.
