IDEAS FOR COOKING THIS WEEK – I didn’t cook for football last week so here are just some weeknight dinners and an app! Enjoy!

SHEET PAN CHICKEN PICATA– You can use whatever chicken you want for this recipe but I suggest not using breasts because they will dry out quicker.I like bone-in thighs, but you can use boneless, or drumstick and thighs. Whatever you choose put on your sheet pan. Pat your chicken dry and then drizzle with olive oil and season with salt and pepper and paprika. Rub all over your chicken and then in between your chicken pieces put sliced lemons. Pour some white wine vinegar and chicken broth over and around your chicken and then cook for 25 minutes at 450. Remove from oven and add minced garlic, capers and fresh chopped parsley and move, and flip your chicken around on top of capers, garlic, lemon, etc. and cook for another 10 minutes or so until everything is cooked through. Serve with some angel hair pasta tossed in olive oil, lemon juice and fresh parmesan cheese.

REUBEN FRITTERS – When pastrami and corned beef brisket are on sale I always find a way to make something reuben-esque!Found this one and it’s a hit in my book.Chop up a mix of pastrami and corned beef (use both or one depending what you like), combine in a bowl with shredded mozzarella cheese, sauerkraut, cream cheese, salt and pepper, garlic powder and some Dijon mustard and combine with a mixer and then scoop out balls and roll in flour, beat egg and then panko crumbs and then fry.(These should take less than 5 minutes, but remove when golden brown) Remove and put on paper towel to absorb oil and then serve with thousand island dipping sauce.

PORK CARNITAS HASH – It’s instant pot time!It’s so easy and quick to cook our favorites on a work night. I rubbed a combination of chili powder, paprika, salt, pepper, onion and garlic powder, cayenne and brown sugar on two pork tenderloins and put some oil in the instant pot and in sauté mode, sear it on all times. Once brown I put in some lime juice, orange juice, sliced jalapenos, chopped Vidalia onion, chopped red peppers, cilantro, scallions, and some medium Mitchell’s fresh salsa, more cayenne pepper, salt, pepper and a spoon of orange marmalade and pressure cooked for 15 minutes and then released the air for another 15 or so.Once it was done I pulled it out and shredded it.While it was cooking, I par boiled some baby potatoes, chopped into smaller pieces and put in a skillet with oil, seasoned them with Spud Fixin’ Camp Mix and add in some drained and washed black beans, Once all cooked, I added the shredded pork, and the veggies, strained, from the instant pot and cook it all together in the hash and then topped with pepper jack shredded cheese.You can also serve with an over easy egg on top or with tortilla chips, avocado, sour cream, salsa.
