IDEAS FOR COOKING THIS WEEK –
My brother in law got me a cookbook that has all these Blackstone recipes!This past weekend I tested out three of them on the Blackstone in preparation for football Sunday apps.I really liked all three!
Falafel Patties – In a food processor I put a can of drained chickpeas, tons of chopped parsley, chopped cilantro, chopped shallots, choppe Vidalia onions, minced garlic, paprika, olive oil, cumin, salt and blend it all together.Put in a bowl and sift in flour and baking powder and mix in until it starts getting firmer.When it’s firm, put in the fridge for an hour or so and then roll into balls.Put some avocado oil on the Blackstone and then put your falafel balls and smash to form a patty.I served with homemade Tziki sauce: Plain whole milk greek yogurt, grated cucumbers (that have been squeezed of all water), chopped dill, garlic powder, lemon juice. You could also put them in a pita too!
Toasted Raviolis – The cookbook used frozen raviolis so I tried these but I also tried with fresh Tuscan Kitchen ravioli which I got at Market Basket in the deli. I will say they are not cheap, but they were so much more tasty!These are so easy and were a hit!Defrost your frozen ravioli (I did cheese but I might try the sausage next time too). In one bowl make an egg wash, one bowl flour, one bowl I mixed bread crumbs with Italian seasoning and grated parm cheese. Dip in the flour, egg, bread crumbs and put on the blackstone that has some added oil and fry up on each side.Once done I sprinkled with chopped basil and parsley and more fresh grated parmesan cheese and served with marinara sauce.
Avocado Spread Mini Pizza – These were super easy and perfect app size.I will be doing tons of versions of these. I am thinking some with shrimp would be great!Or a Mexican cheese and spicy chicken.On the griddle I cooked up some bacon and chopped into small bits and then added in some corn until cooked and then set aside. I bought Pillsbury thin crust pizza dough and used a cup to cut into small circles (or use a round cookie cutter).For my avocado spread, I mashed avocado, lime juice, garlic, salt. I cooked the pizza dough on each side on the blackstone then topped with a layer of avodado, sprinkled on everything bagel seasoning, a scoop of mitchells fresh salsa and then top with bacon and corn and chopped cilantro.
As for other ideas for cooking this week . . .it’s summer so a lot of grilling and with all the deals Hannaford has been offering on steak tips you know that’s on the menu!The other best thing about summer is all the veggies!So chop up some summer veggies stick them in aluminum foil with garlic, butter, lemon juice, salt, pepper and throw on the grill while your meat is cooking!Or if you have a griddle it’s perfect and easy for doing your veggies!Sorry that I am running out of recipes.I have so many that I can’t even keep track!Sometimes I make something we all love at home and I forget that I should make it again and have to go back through all my notes!
