IDEAS FOR COOKING THIS WEEK –

BROCOLI CHICKEN SKILLET

Chop your chicken into cubes and season with Italian seasoning, crushed red pepper and salt and pepper. Heat olive oil in a skillet and cook your chicken until it's golden brown and then add in minced garlic, broccoli florets, chopped sundried tomatoes and cook for a few minutes until garlic is sautéed. Add in cream cheese and a little chicken broth to make a creamy sauce, once melted into a sauce, I add in chopped roma tomatoes and top with shredded mozzarella cheese. (You can stick under the broiler for a minute to make it golden and bubbly.)

MOROCCAN FLAT BREADS

You can use ground lamb if you want to stick to a traditional Moroccan recipe but you can also use ground beef or ground turkey and just add more flavors to make it Moroccan.Buy a Moroccan seasoning or you can use all spice. Cook your ground meat with minced onion, finely chopped carrots (or shredded carrots) with all spice, garlic powder, crushed red pepper, and cook and drain. Then add in some chopped zucchini, grated lemon zest, and cook until your zucchini is tender. Add in some apricot preserves and coat. Then on your Blackstone griddle or your cast iron spray with oil and cook your flat bread on each side until warm, top your meat mixture on top of the naan bread and sprinkle on top with feta cheese and chopped mint and then bake for 5 minutes or until it’s heated through.

CHINESE PORK RIBS

Turn on your grill to get it up to at least 350 or set your oven to 350. In a bowl, make your rub of brown sugar, salt and Chinese five spice powder. Cut your ribs in to smaller slabs and rub with your dry rub, line a baking sheet that will fit in your grill with a heavy duty aluminum foil and put some water on to it and then put your ribs on top and then tightly seal another piece of foil and cook until meat is tender (depending on the size of your ribs it should be an hour to 1 hour 30 minutes) but you will see the meat falling off bone. While your ribs are cooking mix hoisin sauce, soy sauce, honey and some Chinese five spice (sriracha if you want a spicy kick to the sweet) and cook in a saucepan and add in fresh grated ginger and minced garlic, whisk until thick and then set aside until your ribs are done. Remove from baking sheet and put on the grill while turning and brushing with your sauce for another 15 minutes or so.

SHRIMP AND ZOODLES

If you don’t have a spiralizer and you love healthy options like zoodles you should get one.If not Green Giant now sells zoodles in the freezer section and most stores will have fresh zoodles already cut for you in the produce department.Make your zoodles from your zucchinis and set aside. In a large pan cook your shrimp that has been peeled and deveined in some oil and cook with salt and pepper for a minute or two and then add in minced garlic, Italian seasoning and crushed red pepper and cook each shrimp about a minute on each side or until they start to turn pink, remove and set aside in a bowl. In the same pan add in butter, fresh lemon juice, lemon zest, crushed red pepper and some white win and bring to a simmer then add your zoodles and season with salt, pepper and garlic powder and then add your shrimp on top.Garnish with parsley and parmesan cheese.
