IDEAS FOR COOKING THIS WEEK –

SHORT RIB TOSTADAS

Cooking these in the instant pot so they come out much faster but you can also cook in a crock pot for 8 hours on low.For the instant pot put in some oil and your flour coated short ribs and put on sauté mode so they brown on each side.Once they are browned, add in a container of medium container of Mitchell’s Fresh Salsa, a chopped onion, a chopped head of garlic, a can of fire roasted green chilies and put the lid on and seal and cook on high pressure for 30 minutes and then vent for a couple minutes and when all vented remove ribs and shred meat and season with salt and pepper.In a bowl, mix chopped peaches, red onion, cilantro, jalapeno, lime juice, salt and pepper. Heat up your tostada shell, top with your shredded meat, top with some crumbled queso fresco, fresh cilantro and your peach salsa. (Add avocado slices and hot sauce if you like!)

STEAK TIPS WITH BLOOMIN ONION

Key to great steak tips is marinade and the grilling! Tips are on sale, buy and marinade for 24 hours before you cook.Make sure you take them out before you plan on cooking so they get to room temperature before you grill.Delish did a bunch of air fry recipes and I found this one on there for a blooming onion! Slice off your onion stem off of a large yellow onion and then cut an inch from the root down into 12-16 sections but not cutting all the way through.Flip over and pull out sections of the onion gently into separate petals. In a bowl whisk together eggs and a tablespoon of water. In another bowl, mix breadcrumbs, garlic powder, onion powder, paprika and salt. Dip your onion into egg wash and then into breadcrumbs (use a spoon to fully coat each petal) and then drizzle with olive oil. Put in your air fryer basket and cook at 375 for 20 minutes and add more oil if you need it. In a bowl make your sauce, mayonnaise, ketchup, horseradish, paprika, garlic powder, dried oregano and salt.

CREAMY LEMON GARLIC PASTA PRIMAVERA

I know it’s a little more expensive but fresh pasta is so much better and now Tuscan Kitchen sells their fresh pasta at Market Basket!I gave it a try and it’s so good!And perfect for this recipe. Pasta primavera is great this time of year as spring and summer weather hit! Boil your fresh pappardelle pasta in salt water (fresh pasta doesn’t take much time at all) cook and then set aside saving a cup of your pasta water.Heat oil in a skillet and start cooking your veggies!Great thing is you can do whatever veggies you prefer.Here are some options: shallots, carrots, red onions, squash, zucchini, garlic, tomatoes, red pepper, yellow pepper, orange pepper, green pepper, spinach, broccoli, eggplant, cauliflower, asparagus, peas, green beans.For your sauce: Smash garlic and put in a sauce pan with salt and butter and cook until fragrant and soft. Add in white wine, pasta water and reduce, then add in more butter and heavy cream and grated fresh parmesan cheese and reduce to low. Once at the flavor and consistency you like squeeze in fresh lemon juice and add salt and pepper to taste.Pour over you pasta and veggies and then top with lemon zest, fresh chopped basil and more fresh parmesan cheese. Serve with Italian bread.

Delish.com put out a list “The Classic Sandwich to Order in Every State”So I went through the list and boy do some of those sandwiches look and sound so good!I will try to post a different sandwich each week from the list. (These will not be the recipes from the restaurants, but I will be trying to recreate them from the description.)

GEORGIA’S PIMENTO CHEESE SANDWICHES

I love grilled cheese so this one is a must. Combine soft cream cheese and mayonnaise and mix then add in shredded cheddar and Gouda cheese and continue to mix until smooth, add in diced roasted red peppers, salt and pepper. . Heat a cast iron skillet and put mayonnaise on one side of your sourdough bread and lay on the skillet, and put on your pimento cheese spread, then do that with your other slice of bread and cook on both sides until golden brown.
