RECIPES FOR THE WEEK

FRENCH FRIED ONION CHICKEN CASSEROLE –I made this last week and we all loved it!I crushed up fried onions (to a bread crumb texture) and mixed with grated parmesan cheese, onion and garlic powder and Italian seasoning.Dipped my chicken breast in egg wash and then the onion mixture and fried both sides in olive oil on a skillet (didn’t cook all the way through).In a pot I made a roux with butter, flour, season salt and then added some buttermilk, parmesan cheese, pepper and mushrooms and once it was a thick sauce I put in my skillet with chicken, topped with some non crushed crunchy fried onions and sprinkled on some cheddar cheese and then baked until chicken was cooked through.I served with steam broccoli.

HAWAIIAN CHICKEN THIGHS – Salt and pepper chicken thighs and put in a greased casserole dish.In a pot melt butter, garlic, large can of crushed pineapple, chicken broth, spicy brown mustard, honey and paprika.With this recipe I also chop up some ham (or buy the diced ham if it’s on sale) and add it in to the mixture and then top my chicken thighs and bake for about 45 minutes or until cooked through.

TACO CASSEROLE – Brown your ground beef with chopped onions, chopped red and green bell pepper and a can of diced green chiles and a packet (or 2) of taco seasoning.In a sprayed casserole dish, put a layer of crushed nacho cheese Doritos. Top with a layer of refried beans, then your beef mixture.In a bowl, mix milk, eggs and some biscuit (baking mix) and then pour over your other layers in your casserole dish.(If you do shop at Aldi then I recommend the Cheddar Herb Biscuit mix – you don’t need the whole box but use the rest just to make some yummy biscuit.) Bake for 25 minutes or until your biscuit is just about done and then sprinkle on Mexican shredded cheese and bake a few more minutes until melted. Serve with sour cream, avocado, salsa, lettuce, olives, etc!

POT ROAST AND SWEET POTATOES – We still have some cold days and there is nothing better than a pot roast to warm your inside.Rub your roast with oil and season with salt and pepper and brown in a skillet on each side and then put in your crock pot. In your skillet put in some chopped oinons and shallots and cook until soft, add in some beef broth, red wine, worescshire sauce, cinnamon, cumin, paprika, chili powder and scrape the bits off the pan.When your onions are soft pour the mixture over your roast.Chop your sweet potatoes and add to crock pot. And Add some rosemary and thyme.Cook on low for 8-10 hours or until everything is soft.

BACON CHEESEBURGER MEATLOAF – Watch this video – I haven’t tried it yet, but I will when we get back from vacation!
