RECIPES FOR THE WEEK

FIRECRACKERS – I read this recipe on an Aldi blog and can’t wait to give it a try this weekend!Mix at stick of melted butter, 1 packet of ranch dressing mix, ¼ cup Parmesan grated cheese, red pepper flakes, garlic powder and then coat your box of Ritz Crackers.Bake at 300 for 15 minutes!Let me know if you try these!I think they sound great!

Surf and Heart Shaped Turf –The boys like when I get creative with their food.But your Strip steak in the shape of a heart and it will make them smile.I also am using the heart shaped pasta from Aldi as a side for dinner on Valentine’s Day.Cut your strip steak and season with salt and pepper, onion powder and make sure the meat is at room temperature.In a large skillet put in some butter and then add in some garlic and sear your meat on both sides and then stick in the oven to get to the temp you like.For your “surf” make sure you have a thin cut bacon or it doesn’t cook right.Make sure you pat your scallops to get them dry and then wrap each with a slice of bacon and secure with toothpick.Put your scallops on a baking pan.In a bowl, mix some soy sauce, maple syrup, garlic powder, salt and pepper and brush on your scallops.Broil your scallops for 10-15 minutes or until bacon is crispy.You can add more sauce to your scallops as it is cooking.Sprinkle your steak and scallops with fresh cut parsley.For my heart shaped pasta I am making homemade Alfredo sauce: melt your butter in a pot and then add in minced garlic, heavy cream and pepper, simmer and keep stirring.Add in grated parmesan cheese (fresh is best) and continue to simmer as it thickens, then add in grated mozzarella cheese and continue to stir until smooth.Serve over you heart shaped pasta.

CROCK POT DRUMSTICKS – Put your drumsticks in the crock pot.In a bowl, mix some jelly (I used seedless blackberry jam but you can use what you like), ketchup, soy sauce, minced garlic, sriracha (if you like heat), salt and pepper.Pour your sauce over the chicken and cook for 6 hours on low heat or until cooked through.Pull your chicken out of crock pot and put under broiler for 5 minutes or so depending on how crispy you like them.Serve with some steamed veggies!

SPINACH AND CAULIFLOWER MAC AND CHEESE – Cut your cauliflower and boil until tender but not mushy.Drain and season with salt and pepper. In a food processor combine, spinach, parsley, and some milk, set aside this mixture.In a large pot make a roux with some butter, flour and then add in some milk, garlic and onion powder, paprika, salt and pepper and mix until smooth, add in some shredded cheddar cheese and cook until combined and smooth then add in your spinach, mixture.Coat your cauliflower with the is sauce, and put in a casserole dish and top with some more shredded cheddar cheese and broil until the cheesy is crispy on top.

MUSHROOM QUESADILLAS – I absolutely love mushrooms – I know not for everyone so when we do quesadillas at our house I have different options . . . shredded chicken, beef, etc.In a skillet, cook some chopped cremini (baby bella) and chopped white mushrooms in olive oil and add in some fresh minced rosemary and thyme, season with salt and pepper and cook until soft and tender.Remove the mushrooms, scrape skillet clean, add some more olive oil and put your tortilla down (I like whole wheat but you can use white flour too), put some thinly sliced brie cheese down (brie gives it such a gooey cheesiness that I love) and then top with arugula (this will add a pepper taste) then put down some of your mushrooms and drizzle some honey on top, fold over your tortilla and cook on both sides for a couple minutes until golden brown or until cheese is melted.
