RECIPES FOR THE WEEK

HAWAIIAN PINWHEELS – Easy app and just a different way to do a Hawaiian pizza!I take the Hawaiian pizza dough (Aldi has it cheaper than the Pillsbury brand), and put a layer of shredded mozzarella cheese, a layer of diced ham, a layer of crushed pineapple that has been drained (make sure you squeeze a lot the moisture out or it will be too soggy).Roll your dough up and then cut to form your pinwheels, put in a greased baking dish face up and bake for 25 minutes or until golden brown. Serve with a side of sauce for dipping.

ASIAN CHICKEN THIGHS AND BROCOLI – In a bowl mix some salt, pepper, paprika and garlic powder and run on your chicken thighs, cook in a skillet with olive oil until browned on each side.In another bowl, mix some honey, soy sauce toasted sesame oil, garlic powder, red pepper flakes and some chili garlic sauce (find it in the Asian food aisle at Market Basket).Once your chicken is browned you can add the honey sauce (coat both sides) and turn off the stove and move into the oven and cook for about 20 minutes or until cooked through. While cooking steam up some broccoli add salt and you can toss in the bowl with your left over honey sauce.Serve your broccoli and chicken over a brown rice or cauliflower rice.

ROASTED RED PEPPER SHRIMP AND CORN CHOWDER – I forget if I have made this before but it’s one of my favorite chowders.I couldn’t find shrimp on sale but I had some in the freezer so that’s what I am using. If you want to make this as a fish chowder you could get your chowder fish on sale at Hannaford this week for $4.99lb.In a large pot, 2 cans cream corn, one bag of frozen corn, a container of chicken broth and a jar of roasted red peppers chopped.In a skillet, I cook chopped scallions, one red pepper chopped and shrimp (deveined and peeled) in a stick of butter.Once cooked through add shrimp and veggies to pot and then start to make a roux in your skillet (butter and flour) add in a container of heavy cream and once mixed until smooth add to your pot of soup.I season the pot of soup with: garlic powder, onion powder, paprika, cayenne pepper, Italian seasoning, salt and pepper, fresh chopped parsley.

EASY LASAGNA – Nothing better than lasagna on a cold night . . . you have the option of using sliced zucchini as your noodles or real noodles.This is a very easy lasagna but still tasty! In one bowl I mix ricotta cheese with grated parm cheese, onion and garlic powder, and fresh chopped basil and Italian seasoning, one bowl I mix cooked ground beef and chopped up cooked Italian sausage that has been cooked with chopped green peppers, and Vidalia onions and minced garlic.Then you just have to assemble. . . In your baking dish, add a thin layer of your favorite sauce (just love Prego traditional), then your noodles (cooked lasagna noodles) or your zucchini, then, ricotta mixture, meat mixture, shredded mozzarella cheese, layer of sauce, noodles, ricotta, meat, cheese and continue until you have used all your noodles and the last layer is of mozzarella cheese.Bake at 375 for about 50 minutes or until bubbly around the edges.

PORK ROAST WITH MUSHROOM GRAVY SAUCE– Pat your pork dry and then rub with salt, pepper, sage, thyme and minced garlic and place in crock pot then put sliced mushrooms and onions (I like sweet Vidalia but you could use white onion) around the roast,pour chicken broth in crock pot and cook for 8 hours on low.When done your pork will be very tender move to a dish so you can make your gravy.Mix some water and cornstarch until smooth consistency and then start adding to your mushroom broth in crock pot until it gets thick, season with more salt and pepper and I like to add some grated parm cheese in the mix. Serve with your favorite side – green beans are always great!
