CHRISTMAS COOKING

CRANBERRY MEATBALLS – Heat your oven at 350.In a bowl mix ground beef, chopped parsley, soy sauce, garlic powder, diced onions, plain panko breadcrumbs, 2 eggs, salt, pepper, and ketchup.Roll into balls and bake for 25 minutes and then drain your grease. In a bowl, mix a can of jellied cranberry sauce, a bottle of chili sauce, ½ cup brown sugar and lemon juice.Spoon this mixture over your meatballs and bake for 15 minutes.(Or you can put the meatballs in a crock pot to keep warm and top with your cranberry sauce.)

SWEET POTATO CASSEROLE – I love this dessert styled casserole during the holidays!Boil water with salt in it and cook your peeled, chopped sweet potatoes until tender.While they are cooking mix some flour, brown sugar, oats, chopped pecans, salt and butter to make a crumble.Once potatoes are done, drain and mash.Add in some brown sugar, milk, egg, butter, vanilla, cinnamon and nutmeg and put in a casserole dish.Then top with your crumble and cook at 350 for about 40 minutes.Then add on tiny marshmallows and broil for a minute or less until they turn soft and golden brown.

ITALIAN ZUCCHINI CRESCENT PIE – In a skillet, melt butter and add sliced zucchini and onions and some garlic and cook until tender.Add in some dried oregano, basil and parsley, plus salt and pepper.In a bowl, mix 2 eggs, and 2 cups Muenster or mozzarella cheese, add in your zucchinis and stir.In a glass pie dish, line your crescent rolls, sealing all the triangles together around the dish. Spread a layer of yellow mustard on the crescent roll crust and then pour your egg and veggie mixture on top.Bake for 20 minutes at 375.

HAM AND EGG BREAKFAST BAKE –One of my favorite easy ham and egg bake.Heat oven to 350.In a bowl, mix together 12 eggs, some milk, a couple squirts of Dijon mustard, fresh chopped thyme, garlic and onion powder, salt and pepper. Butter the bottom of a casserole dish and then put down a layer of cubed French bread, then put a layer of diced ham, shredded white cheddar, then pour over egg mixture and cook for a little less than an hour.Top with more chopped thyme.

EASY CHOCOLATE PEANUT BUTTER DESSERT – in a bowl combine 1 cup of crushed gingersnap cookies and 4 table spoons of softened butter and press onto the bottom of a square baking dish.In a bowl beat together a package of softened cream cheese, ¾ cups of creamy peanut butter and 1 cup of powdered sugar. Spread ½ this mixture on top of your gingersnap crust, then sprinkle ¾ cup of peanut butter and chocolate chips.In another bowl, whisk together 1 cup of milk and a package of chocolate pudding/pie filling mix and combine with the rest of your peanut butter mix. Spread this over your layer of chips and then top with some more crumbled gingersnaps and peanut butter filled chocolate chips. Refrigerate for 2 hours before serving.
