RECIPES FOR THE WEEK

BLOOMIN’ PRETZEL CHEESE BREAD – But your pretzel buns across without going all and then cut the other way in opposite direction so it looks like little squares). Mix together melted butter, garlic powder and oregano.Take your butter and pour into the cuts you created in your buns. Then stuff your cuts with shredded pizza or shredded mozzarella cheese and chopped pepperonis.Wrap each pretzel bun in foil and but on a baking sheet and bake at 350 degrees for 15 minutes.Unwrap, and but back on the sheet and bake for another 5 minutes to make it a little crispy on the outside.Once done sprinkle with salt and serve!

CHICKEN TORTILLA SOUP– Season your chicken thighs with salt, pepper, paprika and cayenne pepper and cook in a hot oiled skillet. When done set aside and in same skillet cook some chopped jalapenos and onions and garlic.When the veggies are soft put in your pot with some chicken broth, some frozen corn, a can of black beans (drained and rinsed), a can of Mexican style diced tomatoes (and the juice), a can of enchilada sauce (any spice level you want), lime juice, chopped cilantro, chili powder, cayenne, cumin, salt, pepper, paprika and keep tasting until you like the seasonings.Shred your chicken thighs and add to your soup pot.I let mine cook for at least 30 minutes to make all the flavors come out.When you are ready to serve, ladle in bowl and add tortilla strips, sliced avocado and shredded cheese.(I like the Aldi Santa Fe flavored tortilla strips – yummy!)

CREAMY BACON HORSERADISH CHICKEN WITH BAKED POTATO – Start you’re your potatoes because they take an hour to cook.Prick the potatoes with a fork all over and rub with oil, salt and pepper.Put right in the oven on the rack and let them cook for an hour (or until they are soft). Slice slits into the top of your chicken (don’t cut all the way through but make them deep enough to till with mixture), season with salt and pepper and set aside.Chop your bacon and cook to start to get crispy and in some chopped scallions and once bacon is done and scallions are soft, add in a spoon of horseradish, worcestshire sauce, lemon juice,some sugar, some shredded cheddar cheese, and ½ block of cream cheese and start to melt down together.Once all combined, let cool a bit.Once cooled, you can stuff your mixture into your chicken slits and then bake for about 20 minutes (at 350) or until chicken is cooked through.Take your potatoes out slice down the middle, put butter, salt, pepper, some cheese or whatever toppings you like!

PIZZA POT PIE – I saw this Delish Video and I had to try it! (It says to add any pizza toppings into it and I did veggies and sausage). In a skillet (oven safe) heat oil and add in chopped broccoli, diced red bell peppers and cook until slightly soft, add sliced mushrooms, and cook until everything is soft.Add in ground sweet sausage (you can buy regular sausage and take casing off), cook the sausage with the veggies and add in ¼ cup flour and coat all the veggies and sausage, then add minced garlic, oregano, salt and pepper.Stir in your favorite sauce (I used Prego) and then set aside to let cool.While that is cooling, roll out your pizza dough in a circle (a little bigger than your skillet). Top your sausage mixture in your skillet with shredded mozzarella and then put your pizza dough on top of it and trim the edges off and crimp them down.Brush the dough with oil and top with pepperoni.Bake for 40 minutes, until golden brown. Let cool and before serving sprinkle with grated parmesan cheese and fresh chopped parsley.

NY SIRLOIN AU POIVRE WITH SWEET POTATO HASH– Take your steak out pat dry, season with salt and pepper and let sit out to get to room temperature. Get your skillet very hot and add butter, cook your steak in butter (4 minutes on each side). Set your steak aside, put foil on top loosely and let rest.In your same skillet, add some brandy (cognac), beef stock and bring to a boil to burn off some of the booze (5 minutes or so), then whisk in a little bit of heavy cream and simmer, add some butter, stir to make smooth sauce (keep tasting until you get the flavor you like) then add in some fresh chopped parsley and pour over your steak.Sweet Potato Hash: Blanch your diced yams in salted boiling water and then drain.In a large skillet, heat your oil and add in some chopped bacon and cook until crisp and bacon, remove from pan and towel drain.Add diced Vidalia onions and cook until browned and soft add your sweet potatoes and then put in your chopped bacon and fresh chopped parsley, minced chives and thyme and season with salt and pepper. Serve with your steak and if you bought some on sale asparagus cook some up for some veggies!
