RECIPES FOR THE WEEK
BAKED SPLIT CHICKEN BREASTS AND MASHED POTATOES – Split chicken breasts can be tasty and are way cheap, especially this week at Hannaford at 89 cents lb.!Cut some fat off the chicken and pat dry.You can either cut these smaller or keep as big breasts (I like them smaller so I chop them).Take a cookie sheet and line with tinfoil, and put a baking rack on top of it and spray with some pam.In a bowl, mix garlic and onion powder, salt, pepper, celery salt, cayenne pepper, paprika.Put some butter under the skin of the breast, and then drizzle your chicken with oil and rub on your spices on it and bake at 450 degree for 50-60 minutes or until your chicken is done. Mashed potatoes: Boil your water with salt.Peel and chop your potatoes and add to water and cook until soft.Mash your potatoes until smooth.In a sauce pan, melt butter and some milk, and add some sour cream and cream cheese and mix until smooth consistency and combine with your mashed. Season with salt and pepper and I like to grate some parmesan cheese on top!
GREEK COBB SALAD – This salad will keep you full!You can use a rotisserie chicken and just chop the meat or just cook up some sliced chicken breast and set aside.Marinate a can of chickpeas (garbanzo beans) in some olive oil, red wine vinegar, minced garlic, dry mustard, dried thyme, dried oregano, salt and pepper. You can also hard boil some eggs to top off this salad.Now time to chop: romaine lettuce, plum tomatoes, avocados, cucumber, marinated artichoke hearts, feta cheese, roasted red pepper, Kalamata olives, curly parsley, and red onion.Toss everything together and top with your chickpeas and chicken.You can use your favorite Greek dressing or make your own. Greek Dressing: Extra virgin olive oil, red wine vinegar, minced garlic, dry mustard, dried thyme, dried oregano, salt and pepper and taste to your liking.
CHICKEN AND MUSHROOM STUFFED PEPPERS – Cut the tops off of your large green peppers and scoop out all the seeds.Put in a dish with water on the bottom, and season with salt and put in the microwave and put in the microwave for about 7-9 minutes or until they are soft. Cook up some chicken breasts seasoned with salt and pepper, up into small pieces, set aside. Make 2 cups of white rice or use riced cauliflower and set aside. In a sauté pan, put in some butter, chopped Vidalia onions, chopped celery, salt and pepper, and cook until soft.Add in baby Bella sliced mushrooms and cook until those get soft and then set aside in a bowl.In the same pan, add more butter and start scraping the bottom of the pan to pull up onions and mushrooms, add some flour and whisk together to start your roux. Add some chicken stock and milk and keep whisking to make into a sauce and not lumpy, add some thyme, and salt and pepper.Bring to a sauce consistency, add in your mushroom mixture, chicken and white rice. . . .Add more milk if the sauce is too thick.Put this mixture into your softened peppers, top with a white cheddar cheese and bake for 20 minutes until cheese is bubbling and golden!
GAME DAY PARMESAN CHICKEN WINGS – Preheat your oven to 400.Take your chicken wings and pat them dry.Then coat with flour, baking powder, salt and pepper.On a baking sheet, line with foil and then top with a baking wire rack.Bake your chicken for about 40 minutes and flip half way through.Then put the broiler on high to get them crispy and brown (5-10 minutes).In a sauce pan, put some olive oil and butter and melt, add in some minced garlic, grated fresh parmesan cheese, paprika, red pepper flakes, salt, pepper, minced parsley.Once your chicken is browned toss in a bowl with sauce.When you serve your chicken you can add some extra grated parmesan cheese and parsley.
BOURBON STEAK (TIPS, SIRLOIN, RIB-EYE – ALL ON SALE!) AND LOADED CHEESY CAULIFLOWER – Marinate your steak for a couple of hours in a mixture of bourbon, brown sugar, Worcestershire and soy sauce, then fire up the grill!For your cauliflower, chop it up into small florets and put in a bowl with melted butter, salt and pepper.Put your cauliflower mixture into a casserole dish and bake until crisp and tender for about 20 minutes at 450.In a bowl, mix some sour cream and heavy cream until smooth and then add some minced garlic, shredded cheddar cheese, bacon bits and chopped scallions. When the cauliflower is done roasting pour your cheese sauce on top and mix it up.Add more cheddar cheese and bacon bits on top and bake for another 15 minutes or until melted and golden brown.
