RECIPES:
SHORT RIB POLENTA BITES– This was a little time consuming but so worth it! I coated short ribs in a mix of flour, salt, pepper, onion and garlic powder and then cooked each side in olive oil and put in a crock pot. In same pan, I added more olive oil, chopped shallots, chopped carrots and once soft, added some flour, then added red wine, Worcestershire sauce, Dijon mustard and cooked down until thicker and then poured on top of the short ribs and cooked on low for 8 hours. For the polenta bites, I cooked polenta and added salt and pepper and then put in a shallow cake pan and put in the fridge over night. When I was ready to cook, I cut out little circles of the polenta and baked at 350 for 15 minutes until golden and firm and then removed from oven. When your short ribs are done, remove from crock pot and shred the meat. For your sauce in the crock pot, I used cornstarch water and Better than Bouillion beef, mixed and added to the sauce to thicken.Top your polenta with shredded short ribs, red wine sauce, gorgonzola cheese and some chopped parsley and serve.
PROSCUITTO CHICKEN IN LEMON SAUCE – Pound out chicken breast and season with salt, pepper and Italian seasoning and wrap with prosciutto and sear in oil until prosctito is crispy and then put in baking dish and bake at 350 for 15 minutes or until cooked through. While that is baking in the same skillet add garlic and then chicken broth, Dijon mustard, lemon juice and cream and then add in some parmesan cheese. Once the chicken is done pour over the chicken. Serve with broccoli or asparagus that has been roasted with garlic and sprinkled with parmesan cheese.
