IDEAS FOR COOKING THIS WEEK –

BAKED GNOCCHI

In a large skillet cook onions and garlic in oil until soft, add in a jar of passata (tomato puree), some honey, fresh baby spinach, salt, pepper and fresh gnocchi. Stir everything together and add in some fresh chopped basil and when the spinach is wilted top with fresh mozzarella slices and bake for 15 minutes or until golden and bubbly (broil if you have to) and top with more fresh basil. Serve with garlic bread.

CHICKEN THIGHS WITH FRIED RICE CAULIFLOWER

Heat oil in your skillet and add your chicken that has been seasoned with salt and pepper. Cook until the outside is golden and remove and set aside. In your skillet, add grated fresh ginger, minced garlic, cut shallots and cook for a minute and then add in some white wine, and reduce and then add in some soy sauce, a little water and sugar and bring to a boil and then put your chicken back in the pot and bake at 425 for 30 minutes. While that is cooking, grate your cauliflower (or chop the pieces to a rice size in food processor). In a wok or pan, fry a couple eggs and then set aside, add in some sesame oil, add in some diced onions, chopped scallions, frozen peas and some shredded carrots, minced garlic and cook for a few minutes then add in your cauliflower, some soy sauce and cook for about 5 minutes or until it’s crispy and tender. Add in the eggs and some more chopped scallions. When your chicken is done remove from pan, and cook the sauce on the stove until it thickens and then serve on top of your chicken.

HOLY MOLY – PANCAKE COATED CHICKEN BITES

I found this on Delish this month! I haven’t tried yet but pumped to give it a taste! In a bowl, whisk together flower, baking powder and a pinch of salt. Add in milk, an egg, and maple syrup and whisk. Cut chicken breasts into bite size cubes and season with salt and pepper and then dip into the pancake batter and put in frying pan with oil and start frying until golden on each side (or you can put in your fry daddy) and then remove chicken and put on a paper towel and keep doing until all your chicken is done. Serve with maple syrup.

LEMON GARLIC STEAK WITH ASPARAGUS

For your marinade combine some soy sauce and fresh lemon juice, olive oil and sriracha sauce. Marinade your steak for up to a day before. Make sure your steak is at room temp before cooking and then cook in a large cast iron skillet that has oil in it and season with salt and pepper as you cook and then add in some minced garlic and cook the steak on both sides and then remove from heat, in the same skillet add in butter, more fresh lemon juice, lemon zest, red pepper flakes, chicken broth and the marinade that your steak was in and start cooking the sauce after about a couple minutes you can add in your asparagus into the sauce and cook until tender but not mushy and serve with your steak.

Easy meal of the week – REUBEN SANDWICHES

Time to get pumped for St.Patrick's Day and I will be making a boiled dinner but until then let's have one of my all time favorite sandwiches this week! Butter one side of each slice of bread. On the non-butter side spread Russian dressing (you can make your own or buy your favorite) on each slice. Top half of the slices with cheese, corned beef, and sauerkraut. Top each sandwich with remaining slices, dressing side down. Heat a medium skillet over medium heat. Place a sandwich in skillet and cook until golden and cheese is melted.
