IDEAS FOR COOKING THIS WEEK – Send me your recipes too! And I am now on week 3 of Misfits box and still loving it! I can picking veggies we might not normally eat and find a recipe that looks good for me to make! This week I am doing something with acorn squash.

BUFFALO CHICKEN CAULIFLOWER

Shred your chicken (you can do rotisserie chicken for a quick option), or cook chicken breast or whole chicken and shred. Rice your cauliflower (I am using fresh but you can also get frozen). In a bowl, combine some buffalo sauce (Frank’s Red hot Wing Sauce), a softened package cream cheese and shredded sharp cheddar cheese and mix it all together, put in casserole dish, top with more shredded cheddar cheese and cook for 25 minutes covered with tin foil at 375, uncover for the last 10 minutes and top with fresh parsley.

STUFFED SWEET POTATOES

So during covid I was trying to get my taste back and I tried some spice. Gabe at The Spicy Shark has some great products if you haven’t heard of him. Anyways, I made my baked sweet potatoes, sliced the long way, took out the insides, mashed it up with some Spud Fixin’ Seasoning (From Camp Mix) and butter. In a skillet I cooked some chicken thighs with some pork belly, (this week I am using breast because it's on sale and you can always use bacon instead of pork belly - I just had some in the freezer), minced onion and minced garlic and then I added the Smoked Maple Sriracha (from The Spicy Shark). Once all cooked and combined I topped this on my sweet potato and then sprinkled on some sharp cheddar cheese and broiled until golden! (https://www.thespicyshark.com/)

BAKED FETA PASTA

Well if you are on TikTok or actually any social lately then you have seen the craze of this feta pasta! It’s actually hard to find a block of Feta at any of the stores! If you can get your hands on a block than buy and make this (we tried crumbles and they didn’t work like the block). I added seasonings after reading everyone’s way of cooking it. In a bowl, put your grape tomatoes, cut shallots, minced garlic, coat with olive oil and season with onion and garlic powders, salt and pepper and crushed red pepper. On a cookie sheet, in the center put a block of feta and drizzle with olive oil and surround it with your shallot and tomato mixture and sprinkle with thyme and bake for 45 minutes (or until the tomatoes pop and feta is golden). While that is cooking, cook rotini noodles according to package and drain, but reserve a little bit of the pasta water. When the feta is done baking combine with your pasta, a bit of the pasta water to make it creamy and I put in some fresh spinach, and topped with fresh basil and if you want more spice than put more crushed red pepper.

STUFFED CABBAGE CASSEROLE

Everything you love about stuffed cabbage but in a casserole dish! I know cabbage isn’t for everyone but I love it and St.Patrick's is right around the corner. Cook some chopped onion until soft then add in ground beef (or ground turkey) with minced garlic and cook until brown and drain the fat. Stir in a couple spoons of tomato paste, some rice and some beef broth. Season with salt, pepper, oregano, Italian seasoning, a can of chopped tomatoes (I like the Italian style) and simmer, and then add in chopped cabbage until wilted. Pour this mixture into a casserole dish, cover with tin foil and bake for about 35 minutes or until liquid is absorbed and rice is soft. Top with shredded sharp cheddar and broil until bubbly!

Easy meal of the week – PRETZEL COATED PORK CHOPS – I love honey, pretzels and pork chops so why not an easy tasty meal! Smash up your pretzels or put in food processor until chopped (not to fine but smaller pieces will stick better). Season your pork chops with salt and pepper. In a bowl combine some Dijon mustard and honey and coat your pork chops and then coat in your pretzel pieces and fry them up in a skillet until a golden brown and then I put in the oven to cook through. Serve with some green beans (steam and season with some Camp Mix).
