IDEAS FOR COOKING THIS WEEK -
CHICKEN SCAMPI–You can do chicken or shrimp depending on what’s on sale and what mood you are in. I like the fresh pasta rather than the boxed stuff and the best price has been at Market Basket lately (on sale the last 2 weeks). Make sure you salt your water and follow your pasta directions (the fresh stuff doesn’t take too long at all). Season your sliced thin strips of chicken with salt and cook in some oil in a skillet. Once the chicken is brown on both sides (not cooked through), remove your chicken from skillet. In same skillet, melt some butter and add in minced garlic and red pepper flakes and cook until your garlic starts to turn golden and add some white wine and bring to a simmer until it is reduced by half and remove from heat. Add your pasta to the skillet, add your chicken pieces, lemon zest and some lemon juice and then more butter. Add in some of the pasta water if it is too dry.Season with grated parm cheese and parsley.
CARBONARA FRIED RICE -In a skillet cook cut pancetta until crispy and then set aside. Add cooked rice to the skillet and spread evenly across pan, season with salt and pepper and then add frozen peas on top, cook until your rice starts to get browned on the bottom. Mix the rice and peas together and continue to cook and mix as you rice gets crispier. Add the pancetta, and sliced scallions and more salt and pepper to taste, put in a bowl and top with grated parm cheese and then if you want make a hole in the center of each rice bowl and add in an egg yolk and mix the yolk into the hot rice.
SMASH BURGERS–Imade these last weekend and they were a hit! I now think I like them regular than a big juicy burger! MB has ground beef on sale this week but it's the 93% lean - you want to use an 80/20 beef for this so the fat can get that nice sear. Season your ground beef with salt and pepper and roll into balls. I cooked these on my Blackstone Griddle but you could cook on the skillet too. The key is to put your beef balls on to a very hot oiled skillet or flat top grill and then smash, or press down to a very thin patty. The key to these is to keep them thin so the outside gets a nice crispy crust. Add your cheese, melt and for your buns put some butter on both sides of potato buns and grill them in the hamburger fat on your grill or skillet. Serve with some Ranch Tater Tots: Easy – cook your tots andwhen done put in a bowl and toss in a packet of ranch seasoning (dip) package. Put back on cookie sheet and top with cheddar cheese and broil until melted.
GNOCCHI WITH SAUSAGE AND PEPPERS–In a skillet cook sweet Italian sausage (casings removed if you buy the links). Season with oregano, red pepper flakes, and add in minced garlic, thinly sliced red, green, yellow peppers, salt and pepper and once the peppers are soft add some chopped cherry tomatoes and cook until everything is cooked through. Add in a package of cooked potato gnocchi and grated parm cheese and combine. Put your skilled in the oven and broil for acouple minutes to brown everything and serve with parsley and more parm cheese.
Easy meal of the week– Pulled Pork Sandwiches - Love to have the crock pot going for an easy dish, plus the house smells great all day! At the bottoms of your crock pot put sliced vidalia onion. Rub your pork with a mix of salt, pepper, paprika, onion and garlic powder. Pour c can of root beer or Dr.Pepper on top and cook on low for 8 hours. Take a couple of forks and shred. You can then add your favorite bbq sauce to the crock pot or make your own. (Easy recipe: in a saucepan whisk together ketchup, apple cider vinegar, brown sugar, worcestshire sauce, lemon juice, salt, pepper, garlic powder and if you like a spicy bbq like me, add in some hot sauce.) Serve on a toasted roll and top with some coleslaw if you like!
