RECIPES:

SHRIMP PO BOYS – I love this recipe! For your remoulade sauce: combine mayonnaise, horseradish, hot sauce, lemon juice, parsley, Cajun seasoning and ground mustard and salt and pepper. In a bowl, mix stone ground mustard, Worcestershire sauce, hot sauce, buttermilk, eggs and Cajun seasoning add shelled, deveined shrimp and let sit in the fridge for up to an hour. In another bowl mix flour, cornmeal and Cajun seasoning and salt and then move your shrimp into the cornmeal mixture, coat and then deep fry, remove from fryer and set a side on paper towel until all your shrimp is done. Take your French bread, slice and butter and then toast. Top with shredded lettuce, slices of tomatoes, dill pickles, top with your shrimp and remoulade sauce.

BLUEBERRY DONUTS – It’s my sister in law’s birthday and she loves donuts, so I am making these for her on Saturday! Grease a donut pan and set side and pre heat your oven to 350. In a bowl mix a cup of flour, ½ cup of light brown sugar, ½ teaspoon salt, 1 teaspoon baking powder. In another bowl mix ½ cup of buttermilk, 2 tablespoons of unsalted melted butter and a large egg.  Combine your wet mix with your dry ingredients and then add blueberries. Put your batter in a plastic bag, with end cut off or piping bag. Squeeze into your donut pan and bake for 20 minutes or until cooked through. Let sit for 10 – 15 minutes. While they are cooling make your glaze: 1 cup confectioners’ sugar, ½ teaspoon of pure vanilla extract and 2-3 tablespoons of milk (if you want to make a lemon glaze add in some fresh lemon juice). Once your donuts are cooled, pop out of pan and then top with some glaze.
