RECIPES:
PORK PROSCIUTTO – Make this with a side of mashed potatoes and peas or asparagus! Season boneless center cut pork chops with salt and then coat in flour and cook in some oil in a skillet until golden on each side and set aside. In the same pan add some more olive oil and chopped shallots and cook until soft add in fresh sage and some flour, combine until everything is coated and add in some white wine, bring to a boil and then add in chicken broth and cook until thickened. Add your pork into the sauce and then top the pork with slices of prosciutto and grated fontina cheese and grated parmesan cheese and the put under the broiler and cook until pork is cooked through and the prosciutto and cheese is melted and prosciutto is crispy.
FISH SANDWICH – I love fish, and cod is on sale at Shaw’s so fish sandwiches are on the menu this week. Cut your cod pieces to the size that would fit on a bun. Season your fish with salt and pepper. Make a dry station. One bowl mix egg and water, have one bowl with flour and cornstarch and one bowl mix breadcrumbs with dried mustard powder, paprika and cayenne pepper.Coat your fish with flour, then egg and then your breadcrumbs and fry in hot oil (on the stove or fry daddy) until golden brown. Put your fish on a toasted brioche bun, I like cheese on my fish sandwich, but you can serve plain too. Serve with sliced tomato, lettuce and tartar sauce.
