WINTER HOME COOKING:

PIEROGI CASSEROLE – Use whatever flavor pierogi you want, I went with cheddar, lay them out on a greased casserole dish.  In a bowl mix shredded cheddar cheese with cream of mushroom soup and pour some over the pierogis, then top with some ricotta cheese, a layer of chopped fresh spinach, thinly sliced Vidalia onions, and sliced sausage (I used garden chicken sausage but kielbasa or any sausage will work) top with more soup mixture, and continue to layer, more pierogies, spinach, sausage and then top with more shredded cheddar cheese and bake for 45 minutes at 375. Then broil for the last minute or two to make golden and bubbly.

LAST OF THE FOOTBALL COOKING:

CHEESY SHRIMP AND GRITS BITES – Warning that this was a process, but so worth it and so many people LOVED them. They were absolutely delicious little bites! Start by making grits according to the package and then add butter, shredded gouda cheese, paprika, and cayenne pepper. Once the grits are done, spread on a baking sheet about an inch deep and then put in fridge to cool. While that is cooling, heat butter in a pan, add in diced celery, red pepper and scallions and cook down until soft. Add in a small can of tomato paste, Cajun seasoning and then add in some butter and shelled and deveined shrimp and cook until pink and remove from heat. In a bowl make your remoulade sauce: mayo, sriracha, relish, garlic and put in the fridge.  Now make your frying station: one bowl flour, one bowl whisked eggs, one bowl Italian seasoned panko crumbs. Once your grits are cooled, use a cookie cutter to make small round cut outs, then, put each in flour, egg, and then panko and fry one each side in oil until golden brown. Do this with each one . . .I made about 30-40 of them. Put on a platter and then top with one shrimp and vegetable mixture and spoon on some remoulade sauce and top with chopped scallions.
