COMFORT FOOD:

STUFFED ACORN SQUASH – Cut your acorn squash in half and scoop all the seeds out and coat with olive oil and salt and pepper and then and cook for face up in the oven at 400 for about 30 minutes and then flip up and cook for another 20-30 minutes or until soft. While that’s cooking, make your stuffing, in a skillet, put oil, fresh chopped sage and then ground chicken, season with salt, pepper, crushed red pepper, and once done and remove from the skillet and put in a bowl on the side. In the same skillet, add more oil, chopped Bella mushrooms, chopped red onion, minced garlic, fresh thyme, salt and pepper and cook until everything is soft. Add in cooked rice (you can use brown or white) and then some heavy cream, grated fontina cheese and mix well until cheese is melted and then add in your cooked ground chicken. Once your squash is done, add your filling into each half and then top with more shredded fontina and bake for 15 minutes at 350 degrees. Top with fresh thyme and black pepper.

FOOTBALL COOKING:

BACON CRACK – This is an oldy, but we love it! Cook a bunch of bacon and chop up and set aside.On a parchment paper lined cookie sheet lay out Kettle Cooked Salt and Pepper Chips, top with crumbled brown sugar, then drizzle on maple syrup, sprinkle with crushed red pepper and cayenne pepper, then top with your crumbled bacon and then shredded cheddar cheese and bake until cheese is melted at 350 (takes about 10-15 minutes). Remove from the oven and let cool. Once cool, cut into squares to serve.
