FOOTBALL COOKING:

SEAFOOD STEW – One of my favorites! In a pot with oil cook chopped carrots, celery, shallots, fennel and onions until soft and then add minced garlic and cook for another minute and then add a can of tomato paste, clam juice, Spicy V8 juice and some vegetable broth. Season with crushed red pepper, salt, black pepper, Italian seasoning. Then add in deveined, raw shrimp, scallops, cod that has been cut in chunks, and mussels.Cook through, top with the fennel and serve with pieces of garlic bread.

SHORT RIB POUTINE – Another favorite at the house! Get your short ribs to remove temp and remove the membrane from the bone. In a bowl mix flour, salt, pepper, paprika, onion and garlic powder. Coat your short ribs on each side in flour mix and fry on each side in olive oil. Once brown on each side put in a crock pot and set on low heat. In the same skillet you cook your meat in and add more oil, chopped onions until soft and then add in garlic. Coat everything with flour and add in beef broth, ketchup, Worcestershire sauce, sriracha, brown sugar and then put sauce on top of your short ribs. Cook in the crock pot for 6-8 hours and meat will fall off the bone. Remove the bones and shred your meat. Cook steak fries as directed, put in bowl and top with your beef and sauce and then top with cheese curds. (Aldi has 3 types of curds: cheddar, garlic and Cajun. I like to use all three on top.) Melt your cheese curds under the broiler and then serve.
