FOOTBALL COOKING:

KFC CHICKEN LITTLE SANDWICHES – My favorite sandwiches when I was growing up and then they went away! They brought them back at one point, but they were never the same. For these sandwiches I cut chicken breast in to small slider size pieces and marinate in pickle juice for 24 hours. I save all my pickle juice just for these chicken sandwiches. In a bowl, mix flour, cornstarch, paprika, oregano, salt, pepper, onion and garlic powder. In another bowl, whisk some eggs.Take a piece of chicken from the pickle juice, coat in flour, then coat in eggs, and then put back in flour mix and then fry in a pan on each side until cooked through. On small slider rolls, spread mayonnaise, put a dill pickle chip on the bun and then a piece of your chicken.

CHICKEN CORDON BLEU SOUP – It was so good but got salty as it sat in the broth so next time, I am adding no salt! I first cooked my chicken breast and chop into small pieces. In a large soup pot, put in a block of cream cheese, and one block of Boursin Shallot and Chives Cheese, and a jar of Better Than Gravy Roasted Chicken and melt down and add in chicken broth and heavy cream, Dijon mustard, season with garlic and onion powders and black pepper. In a frying pan, cook your ham steak on each side and then chop into small pieces. Add your chicken and ham to the broth and some fresh chopped parsley. Make homemade croutons: butter and garlic powder on Italian bread and bake until crusty and then cut into small croutons.When you serve, spoon some soup into a crock, add some croutons and top with shredded Swiss cheese and broil until cheese is melted on top.
